This scrumptiously photographed cookbook (which includes step-by-step pictures as well as those of finished dishes) is organized in chapters from soups to sweets, with many of the main-course recipes offering one or two accompaniments including Fillet of Sole with Herb Stuffing and Purée of Peas; Rib Roast with Yorkshire Pudding and Mustard-and-Horseradish Sauce; and Lamb Curry with Pear Chutney, Brown Rice, and Okra. Along the way are illustrated instructions for such basic kitchen techniques as peeling and seeding a tomato, boning a chicken, and opening an oyster (all indexed at the end of the book). Finally, two chapters are devoted to mastering the techniques of making bread and various pastry doughs, followed by recipes that use these skills including Black Pepper Bread with Walnuts, Puff Pastries of Oysters and Asparagus, and Fresh Raspberry Linzertorte. (Please note that the cover on this title is a bit shop-worn.)
